Fruit Cake
– 1 cup heavy cream – 2 egg yolks – 1/4 cup granulated sugar – 1 tsp vanilla extract – 100g dark chocolate (melted) – 1 tbsp butter
Whisk egg yolks and sugar in a heatproof bowl over simmering water until thick. Remove from heat and stir in vanilla. Let it cool completely.
Whip the heavy cream in a chilled bowl until stiff peaks form. Set aside in the fridge while you prepare the chocolate mixture.
Melt the chocolate with butter in a double boiler until smooth. Let it cool slightly before using, but do not allow it to harden.
Fold the cooled chocolate into half of the whipped cream gently. Stir until just combined to make a light, airy chocolate mousse layer.
Fold the egg mixture into the remaining whipped cream to create the vanilla mousse. Be gentle to keep the texture smooth and fluffy.
1. Layer chocolate and vanilla mousse in glasses. Chill for at least 2 hours. Garnish with chocolate shavings or berries before serving.
