– 2 cups grated zucchini – 3 cups all-purpose flour – 1 tsp baking soda – 1/2 tsp baking powder – 1 tsp salt – 1 tbsp ground cinnamon – 1/2 tsp ground nutmeg – 3 large eggs – 1 cup vegetable oil – 2 1/4 cups granulated sugar – 1 tbsp vanilla extract
Preheat oven to 325°F (163°C). Grease two 9x5-inch loaf pans or line with parchment paper for easy removal after baking.
Grate fresh zucchini and gently squeeze out excess water using a clean cloth or paper towel to prevent soggy bread.
In a large bowl, whisk flour, baking soda, baking powder, salt, cinnamon, and nutmeg until evenly combined.
In another bowl, beat eggs. Add oil, sugar, and vanilla. Mix well until smooth and slightly thickened.
Add dry ingredients to the wet mixture gradually. Stir just until moistened, then fold in the grated zucchini.
Divide batter between pans. Bake 50–60 minutes until a toothpick comes out clean. Cool before slicing. Enjoy warm or cold!
