Ingredients

– 4 small flour or corn tortillas – 4 eggs – ½ cup shredded cheese (cheddar or your choice) – ½ cup diced tomatoes – ¼ cup chopped onions – ¼ cup chopped cilantro – 1 tbsp olive oil or butter – Salt and pepper to taste – Optional: hot sauce, avocado, cooked bacon or sausage

Instructions:

Heat oil or butter in a skillet over medium heat, then add chopped onions. Sauté for 2–3 minutes until softened and lightly golden.

Crack the eggs into a bowl, season with salt and pepper, then whisk well. Pour eggs into the skillet and scramble gently with a spatula.

Once eggs are cooked through but still soft, turn off the heat. Sprinkle cheese over the eggs and let it melt slightly from the residual heat.

Warm the tortillas in a separate pan or microwave for 20 seconds. This helps make them pliable and ready to hold the filling without tearing.

Spoon the cheesy scrambled eggs onto each tortilla. Top with diced tomatoes, chopped cilantro, and any optional toppings you like.

Fold the tortillas gently and serve warm. Add a dash of hot sauce if desired. These breakfast tacos are quick, easy, and packed with flavor!
