Fruit Cake
– 1 (5.1 oz) package instant vanilla pudding mix – 3 cups cold milk – 1 (14 oz) can sweetened condensed milk – 1 tbsp vanilla extract – 1 (8 oz) container whipped topping – 1 box vanilla wafers – 4 ripe bananas, sliced
In a large bowl, whisk pudding mix and cold milk for 2 minutes until thickened. Let sit for 5 minutes to fully set before continuing.
Add the sweetened condensed milk and vanilla extract to the pudding. Stir until smooth and fully combined for a creamy texture.
Fold in the whipped topping gently with a spatula. This keeps the mixture light and fluffy while ensuring it blends well with the pudding.
In a trifle dish or large bowl, layer vanilla wafers, banana slices, and pudding mixture. Repeat layers until ingredients are used up.
Finish with a layer of pudding and garnish with crushed vanilla wafers or a few banana slices for decoration. Cover and chill for 2 hours.
