Heat olive oil in a pot over medium heat. Add chopped onion and garlic, sauté until soft and fragrant, about 2-3 minutes.
Add ground beef to the pot and cook until browned, breaking it up as it cooks. Drain excess grease if needed to reduce fat.
Stir in chopped bell pepper, diced tomatoes, and tomato paste. Mix well until everything is evenly combined and heated through.
Add beef broth, chili powder, cumin, paprika, salt, and pepper. Stir and bring to a simmer, allowing the flavors to blend.
Lower the heat and let the chili simmer uncovered for 25-30 minutes until it thickens to your liking. Stir occasionally to prevent burning.
