Fruit Cake
– 3 cups rolled oats – 1 cup chopped nuts (almonds, walnuts, or pecans) – ½ cup honey or maple syrup – ⅓ cup coconut oil – 1 tsp vanilla extract – ½ tsp salt – 1 tsp cinnamon (optional) – ½ cup dried fruit (raisins, cranberries, etc.)
Preheat oven to 325°F (160°C) and line a baking sheet with parchment paper for easy cleanup and even baking.
In a large bowl, mix oats, chopped nuts, cinnamon, and salt until evenly combined and all ingredients are well distributed.
In a saucepan, warm coconut oil and honey until melted. Remove from heat and stir in vanilla extract gently.
Pour the wet mixture over the dry ingredients and stir thoroughly so everything is coated evenly and nothing remains dry.
Spread granola mixture in an even layer on the baking sheet and bake for 20–25 minutes, stirring halfway through.
Let it cool completely. Stir in dried fruit. Store in an airtight container and enjoy as a snack or with yogurt or milk.
