French Onion Green Bean Casserole

Ingredients

– 1 lb fresh green beans, trimmed and halved – 1 can (10.5 oz) cream of mushroom soup – 1/2 cup milk – 1 cup French fried onions – 1/2 cup shredded Gruyère or Swiss cheese – 1 small onion, thinly sliced and caramelized – Salt and pepper to taste – 1 tbsp olive oil

Instructions:

Boil green beans in salted water for 5 minutes until tender-crisp. Drain and set aside while preheating your oven to 350°F (175°C).

Heat olive oil in a skillet, add sliced onions, and cook on medium heat for 15 minutes until deeply caramelized, stirring occasionally for even browning.

In a large bowl, mix the cream of mushroom soup, milk, cheese, caramelized onions, salt, and pepper until smooth. Fold in the green beans gently.

Transfer the green bean mixture into a greased baking dish. Spread evenly and top with half of the French fried onions for extra flavor and texture.

Bake uncovered for 25 minutes until hot and bubbling. Carefully remove from oven and sprinkle remaining French fried onions on top for crunch.

Return to oven for another 5 minutes or until onions are golden brown. Let sit for a few minutes before serving warm as a savory side dish.
