Easy Zucchini Fritters Recipe

Ingredients

– 2 medium zucchinis, grated – 1/2 cup all-purpose flour – 1/4 cup grated Parmesan cheese – 1 large egg – 2 cloves garlic, minced – 1/2 teaspoon baking powder – Salt and pepper to taste – Olive oil for frying

Instructions:

Grate the zucchinis and squeeze out excess water using a clean kitchen towel or paper towels. Place in a large bowl.

Add the grated Parmesan, egg, minced garlic, flour, baking powder, salt, and pepper to the bowl. Stir until well combined.

Heat a bit of olive oil in a frying pan over medium heat. Once hot, scoop spoonfuls of the mixture into the pan, flattening slightly.

Fry the fritters for about 2-3 minutes on each side, until golden brown and crispy. Adjust heat as necessary to prevent burning.

Once cooked, remove fritters from the pan and drain on a paper towel to remove excess oil.

Serve warm with a dipping sauce of your choice or as a side dish to your main meal. Enjoy!
