Cottage Cheese Egg Bites

Ingredients

– 1 cup cottage cheese – 6 large eggs – 1/2 cup shredded cheddar cheese – 1/4 cup chopped spinach – 1/4 cup diced bell pepper – Salt and pepper to taste – Cooking spray

Instructions:

Preheat oven to 350°F. Spray a muffin tin with cooking spray to prevent sticking. This will help the egg bites pop out easily once baked.

In a blender, combine eggs and cottage cheese. Blend until smooth this creates a fluffy texture and helps evenly mix the ingredients.

Pour the egg mixture into a bowl. Stir in shredded cheddar, chopped spinach, and diced bell pepper. Add salt and pepper to taste.

Carefully spoon the mixture into each muffin cup, filling about 3/4 full. This allows room for the egg bites to puff while baking.

Bake for 20–25 minutes or until the centers are set and tops are lightly golden. Let them cool in the pan for 5 minutes.

Gently remove egg bites with a spoon or knife. Serve warm or store in the fridge for up to 4 days. They’re great for a quick, healthy snack!
