Fruit Cake
For Dough: – 2 ¾ cups all-purpose flour – 3 tbsp granulated sugar – 1 tsp salt – 2 ¼ tsp instant yeast – ½ cup whole milk – ¼ cup water – 3 tbsp unsalted butter, melted – 1 large egg For Filling: – ⅔ cup brown sugar – 1 ½ tbsp ground cinnamon – ¼ cup unsalted butter, softened For Icing: – 4 oz cream cheese, softened – ¼ cup unsalted butter, softened – 1–1 ½ cups powdered sugar – ½ tsp vanilla extract – 1–2 tbsp milk
Warm milk and water slightly, then mix with melted butter, sugar, and yeast. Let sit 5 minutes. Add egg, flour, and salt. Mix and knead until soft dough forms.
Cover dough and let it rise in a warm place for 60–90 minutes, until doubled. Roll it out into a 14x8-inch rectangle on a floured surface.
Spread softened butter over the dough. Mix brown sugar and cinnamon, sprinkle evenly over butter. Tightly roll up dough from long side and slice.
Place rolls in a greased 9x9 pan. Cover and let rise again for about 30–40 minutes, until puffy. Preheat oven to 350°F while rolls rest.
Bake rolls for 20–25 minutes until golden brown. Remove from oven and let them cool slightly, just enough to still melt the icing a bit.
For icing, beat cream cheese and butter until smooth. Add powdered sugar, vanilla, and milk. Mix until creamy. Spread over warm rolls and enjoy!
