– 9 cups Rice Chex cereal – 1 cup semi-sweet chocolate chips – 1/2 cup peanut butter – 1/4 cup unsalted butter – 1 tsp vanilla extract – 1 1/2 cups powdered sugar
In a large microwave-safe bowl, melt chocolate chips, peanut butter, and butter on high for 1 minute. Stir and microwave for 30 seconds more.
Mix in vanilla extract after melting. Stir until smooth and creamy. This will be your rich, gooey coating for the cereal.
Pour Chex cereal into a large mixing bowl. Slowly pour the warm chocolate mixture over the cereal, gently folding to coat all pieces.
Transfer the coated cereal into a large ziplock bag. Add powdered sugar, seal the bag, and shake until everything is evenly coated.
Spread the cereal on a baking sheet lined with parchment paper. Let it cool and set for at least 30 minutes before serving or storing.
Once cooled, store in an airtight container. It stays fresh for up to a week, making it a perfect snack for parties or movie nights!
