Fruit Cake
– 2 cups all-purpose flour – 1/2 cup granulated sugar – 2 tsp baking powder – 1/2 tsp salt – 1/2 cup milk – 1/4 cup unsalted butter, melted – 2 large eggs – 1 tsp vanilla extract – 1/2 cup fruit jelly (any flavor) – Powdered sugar (for dusting)
Preheat oven to 375°F (190°C). Lightly grease a donut pan and set aside. In a bowl, whisk flour, sugar, baking powder, and salt until well mixed.
In another bowl, mix melted butter, eggs, milk, and vanilla. Gradually add the wet mixture to dry ingredients, stirring until a smooth batter forms.
Spoon the batter into the donut pan, filling each mold about 3/4 full. Smooth the tops gently with the back of a spoon for even baking.
Bake for 10–12 minutes or until the donuts are golden and a toothpick inserted comes out clean. Allow to cool slightly before removing from the pan.
Using a piping bag with a narrow tip, fill each donut with jelly by inserting the tip into the side and gently squeezing until filled.
Dust the tops with powdered sugar. Serve warm or at room temperature for a soft, delicious treat perfect for breakfast or a sweet snack.
