Soft Gingerbread Pryaniki Cookies Recipe

Ingredients

– 2 ½ cups all-purpose flour – 1 tsp baking soda – 1 tsp ground ginger – 1 tsp ground cinnamon – ½ tsp ground cloves – ¼ tsp salt – ½ cup honey – ¼ cup molasses – ¼ cup unsalted butter – ½ cup brown sugar – 1 large egg – ½ tsp vanilla extract – Powdered sugar (for dusting)

Instructions:

In a saucepan, combine honey, molasses, butter, and brown sugar. Heat over low, stirring until smooth. Remove from heat and let cool slightly.

In a bowl, whisk flour, baking soda, ginger, cinnamon, cloves, and salt. Mix well to evenly distribute the spices throughout the flour mixture.

Add egg and vanilla to the cooled molasses mixture. Stir to combine, then slowly add the dry ingredients, mixing until a soft dough forms.

Cover the dough and chill for at least 1 hour, or until firm enough to handle. Preheat the oven to 350°F (175°C) and line baking sheets with parchment.

Roll dough into 1-inch balls and place 2 inches apart on the sheets. Bake for 10–12 minutes until just set but still soft. Do not overbake.

Let cookies cool completely. Dust generously with powdered sugar before serving. Store in an airtight container for up to one week for best softness.
